Ok, I have heard most of the things that I should not eat, things I should stay away from, but what I want to know is what CAN I eat?

A: There are very few things in cans, boxes or jars, that you can use..fresh is best, frozen is the next best...I have seen a few things in cans that are low in sodium,,,",no salt "veggies like tomatoes, you can find diced, stewed etc..,,,Hunts and Heinz has a no salt tomato ketchup,,,Del monte makes a few things in cans that say no salt.. . Healty choice frozen dinners run around 500 mg of sodium..you don't say how much you can have but a low sodium diet is usually 1500mg.. Shredded wheat is a good choice for a cereal,,and you can buy plain flour and cornmeal and order no sodum baking powder and baking soda from Megaheart.com....... You should try Also salt, It taste like regular salt. Not metalic liek most of the salt substitutes... I tried it on a sliced tomato and it was great....Alsosalt.com You can get a low sodium ham, beef or chicken, redibase for gravies and soups from redibase.com.......since you can no longer have processed foods like ham, hot dogs, lunch meat, most cheeses....this base comes in handy to liven up soups, beans, green beans,,,etc...as for bread,,,there are some out there that are fairly low but you have to be careful....Walmart has low sodium bread...but making your own is easy and a lot cheaper...just use substitute salt for the salt and for quick breads,,use the low sodium baking powder and baking soda... Try lemon juice, different vinegars,,spices to make up for the lack of taste. It won't take long before you will prefer food with less salt....watch Mayo and mustard,,,,some are much lower than others. No olives, pickles, even salad dressing can be high..I find that oil and balsamic vinegar makes a good dressing..or sour cream,,mixed with a little mayo and garlic,,,is fine if you don't use too much.. There is no way around it,,you will have to cook from scratch a lot more than you did.....I hated it at first, but now I enjoy it. We are on low income too so I know it can be done,,,,Fresh veggie and fruit as you already know, potatoes, rice, pasta,,,make sure you don't buy chicken or turkey or pork that has been injected with salt,,they do that all the time,,,,buy store wrapped meat from the meat dept.....it is usally safe... I need to find some recipes that will trick my picky eaters! They love the high chol stuff, but I really want to serve healthier foods (especially low cholesterol - my husband has slightly high chol). It's really hard to cook for them, without making meal monotonous for them. I don't want to cook the same few meals over and over. Breakfast is a big problem. We normally stick to cheerios and other grain cereal, which is fine for the weekdays, but they like a big breakfast on the weekends. Any suggestions for all meals, including breakfasts?

A: If cholesterol is the big concern, here are some tips: In omelets or scrambled eggs, you can use some whole eggs and some egg white from a carton to cut down on the cholesterol. Yes, it won't taste quite the same but it'll be okay. You can even use only egg whites, but that may not please them; maybe only give that to your husband! If you're doing omelets, fill them with healthy stuff rather than mounds of cheese. Mushrooms or onions sauteed in olive oil is nice, and fresh herbs are flavorful too. If they are into breakfast meat, try to get them to eat ham or canadian bacon, they're much healthier. Pancakes / waffles and the like are okay if they don't tend to top them with butter. You can do some good substitutions there; in pancakes, replace the egg with a mashed up banana, and replace the melted butter with light cooking oil. In waffles, substitute out half the egg yolks for mashed banana, and again replace the melted butter with oil. (Keep all the egg whites, especially if your recipe calls for you to beat them and then fold them in.) And if you can get them to try oatmeal even just once every two or three weekends, it would be a big triumph. You can make it fun with fresh fruit, sugar, and spice.

A: That is high low density lipoprotein (LDL), not low cholesterol. You have high LDL ("bad cholesterol"). Overweight people should consume no more than 30 percent of total calories from fat.
